When we were in Montreal last year I ate a dish callled Flammkuchen for lunch. It's a recipe originally from the Elzas in France also known as Tarte flambée. Back in Holland I couldn't remember the name until I was in a restaurant in Drenthe a couple of weeks ago which served it to my great surprise. It was as good as I remembered so we baked one ourselves following this recipe. We made it the traditional way with bacon and onion but you can add whatever toppings you like. Do roll out the dough more than it says in the recipe, because it turned out too thick for our liking.
